Canarian Cuisine on Tenerife, 10 Local Dishes to Taste

Tenerife cuisine is quite different from the mainland Spanish fare often found in some resort restaurants. For anyone interested in trying some truly local cooking here are ten favourites to look out for on the menus in Tenerife’s authentic Canarian restaurants.

Potaje de Berros – Watercress Soup
Everyone has their own recipe but generally this hearty dish includes watercress, beans, onion, green pepper, tomato, garlic, saffron and (bad news if you’re vegetarian) pork. It’s usually served as a starter but it could double as a main course.

Escaldón de Gofio – no translation
A truly authentic local dish using the same ingredients that Tenerife’s original inhabitants, The Guanches used centuries ago, gofio. This toasted wheat is mixed with fish stock and herbs to make a thick paste. Try as a starter; it’s about as Tenerife as you can get.
Recommended Restaurant for Escaldón de Gofio – Cofradiá de Pescadores in Puerto de la Cruz.

Puchero – Stew
This kitchen sink medley can include beef, chicken, pork ribs, chickpeas, onions, tomato, carrots, sweet potato, courgette, corn, pumpkin and sometimes even pears. It’s a dish designed to keep people fuelled for working in those hills.

Carne con Papas – Meat with Potatoes
A simple little dish which makes quite a good lunch option. The meat with potatoes combination is given a perky boost by some savoury spices.

Conejo en Salmorejo – Rabbit in Sauce
Fried pieces of marinated rabbit in a flavoursome sauce; it’s lip-smacking good.
Recommended Restaurant for Conejo en Salmorejo – Los Faroles in Puerto de la Cruz & Mesón del Norte near El Palmar in Buenavista del Norte.

Vieja – Parrot Fish
One of the most popular fishes on Tenerife this is as tasty a fish as I’ve tried and I’ve eaten the equivalent of schools of different fish. Beautifully flavoured.
Recommended Restaurant for Vieja – Tasquita de Min in Puerto de la Cruz.

Pescado Encebollado – Fish in Onion Sauce
This is usually made with bacalao (cod) or cherne (grouper) and is a favourite in Tenerife fish restaurants.
Recommended Restaurant for Pescado Encebollado – Tasquita de Nino in San Miguel de Abona.


Cabra – Goat
Goat on Tenerife is delicious. Cabra is marinated in wine, fried and served with chips.

Pollo al Ajillo – Garlic Chicken
A speciality of Adeje, these savoury, crunchy pieces of chicken are Tenerife’s version of Kentucky Fried Chicken and a real crowd pleaser.
Recommended Restaurant for Pollo al Aljillo – Otelo or Oasis in Adeje above the resorts of Costa Adeje.

Leche Asada – Baked Milk
To finish off, try a typical Canarian dessert of leche asada; a mix of egg, milk, sugar, lemon zest and
cinnamon baked in the oven.

Although I’ve included recommended restaurants, many of these dishes can be found in most traditional Canarian restaurants on Tenerife.
